Sprouts – Not Just For Christmas! Sprout & Stilton Soup.

I bet some of you are reading the title of this blog and thinking ” Crazy woman making sprout soup ! ”  Are you a lover or hater of sprouts ? I actually quite like them but we only seem to eat them on Christmas Day, making me think this much hated vegetable is grossly misunderstood. Ok, I am not about to break and down and cry for sprouts here, but I do think they should play a much bigger role in the kitchen.

So on that thought, here is my yummy recipe for Sprout & Stilton Soup. Weirdly the soup doesn’t actually taste of sprouts, but it is a wonderful soup to be enjoyed all year round.

The ingredients are straight forward and can be found in most local shops and don’t forget if you struggle to find fresh sprouts you can always use frozen.

You will need :

Sprouts ( obviously ) I used 500 grams which makes more than enough soup for three people.

Onions ( although these can be omitted as you will be using other spices for extra flavour )

Garlic – crushed – 1 teaspoon. I use Easy Garlic which can be bought in a jar from most big supermarkets.

Stilton Cheese.


Coriander Leaf. Fresh or dried.

Stock cube. I use vegetable stock. Make it up to 1 litre and add more or less according to how many sprouts you use.

Double Cream.

A sprinkling of Parmesan cheese to decorate.

And that’s it ! Just a few basic ingredients which will give you a wonderful healthy soup perfect for a light lunch or family supper.

Firstly chop the onions and fry them in a little oil till they become translucent and soft. Next add the garlic, turmeric and coriander and fry for a few more minutes till all are blended.

Then add the sprouts to the onion mixture and add the stock cube which you have made into about 1 litre of liquid.

Give the mixture a stir and leave to cook until the sprouts are cooked through.

Once the sprouts are cooked add about 100 grams of Stilton cheese to the mixture. You can vary the amount of cheese you add depending on your taste and dietary requirements.

Let the cheese melt into the mixture and add a small amount of double cream.

Using a hand blender or a potato masher if you don’t have access to a blender, blend the mixture till it resembles a smooth liquid soup.

Finally add a swirl of cream and serve with crusty bread.

    That’s different! I love sprouts. Always make them with mash and bacon and mushrooms!
