Healthy Kale And Parmesan Cheese Crisps

About ten years ago I was told I had to go on a low salt diet by my doctor which meant only one thing to me ! ” NO more crisps !” I have always loved crisps, especially between two slices of bread. Walkers Cheese & Onion were my absolute favourite but due to the progression of my Meniere’s Disease ( a chronic inner ear condition which causes vertigo ) I had to drastically reduce my salt intake to about 2mg a day. Yuk !

So there I was on the look out for an alternative. Trust me, there is NO alternative to Walkers Cheese & Onion crisps. I found Walkers Salt N Shake crisps which are basically plain potato slices fried with no flavour whatsoever. *sigh* But after all these years I am getting used to them and every so often I sneak a few flavoured crisps and drink lots of water hoping to flush the excess salt out of my body ! Haha.

Anyway back to the reason for this post which is to share my recipe for healthy kale crisps. I came across this recipe many years ago when kale wasn’t quite the popular vegetable it is now. It’s an easy recipe with just a few ingredients and it’s quick to make. Best of all, it is healthy and believe it or not, these are SO moreish. I know you are thinking, ” the girl must be mad to eat kale crisps” but please try it as I am convinced you will be hooked and will be making these every week.

So the ingredients you will need are :


Olive Oil ( I always use extra virgin )

Parmesan Cheese

Grated garlic

Spices to suit – chillies, black pepper, cayenne pepper.

After washing the kale, dry it with a clean tea towel or paper towel and spread out on a non stick baking tray.

Next drizzle in olive oil, adding the crushed garlic and spices. Add spices depending how hot you like it but remember go easy on the chillies.

Next, add a good sprinkling of parmesan cheese all over the kale.

Finally, using a spoon, mix everything together so the kale is evenly coated in the oil, spices and cheese.

Pop into a medium hot oven of about 150F and bake for 10-15 mins turning the kale over after about 5 minutes to ensure even cooking.

The kale crisps are done when the edges of the leaves start to brown and curl and become crisp to the touch. Each oven is different so watch the kale carefully as it can burn quite quickly.

And that is it ! Kale crisps which are healthy and delicious and baked in no time at all.

At the moment kale is quite cheap and I usually buy a large bag for about £1 which makes two large portions. I know some of you will be quite dubious about crisps made from kale, but please try them and let me know what you think. Also have any of you ever made crisps from other vegetables ? I have had parsnip and beetroot crisps which were nice but not a patch on my kale crisps !

    ‘It is a very good source of vitamin B6, dietary fiber, calcium, potassium, vitamin E, vitamin B2, iron, magnesium, vitamin B1, omega-3 fatty acids phosphorus, protein, folate and niacin.’ I like Kale, might try this without the garlic 🙂 good snack food for writer’s block I reckon! thanks for sharing Susanna

      Wow ! Its full of so many nutrients. Thanks for the info Toria xx Yes you can easily make it without the garlic. Sometimes I just use chillies or black pepper but you can add any spices to suit. It’s a brilliant snack food. Hopefully it will help your writers block but if not, you will still have had a nice healthy snack. xx

    I know how hard it is not to be able to eat certain things. I’m glad you found something interesting. As you say there is no alternative to the famous cheese and onion! I can’t eat them either, or olive oil or most cheeses or onions or garlic ! But I can eat ready salted Walkers crisps !

      Thank you for your comment Laurie. It is hard isn’t it, to find alternatives to certain foods when you are faced with a restricted diet. Salt seems to be in everything so I have to read labels all the time and even check the menu before we go to a restaurant. I do find that eventually it gets easier to avoid certain things and certainly I have found that chefs in most hotels and restaurants are flexible and will cook something just for you. I tell myself that it is healthy to have a low salt diet but that doesn’t stop me craving Walkers Cheese & Onion crisps 😉 xx

    aww I love this idea.

    I’m generally not a crisp fan but my poor partner through medical problems literally can hardly eat most ingredients but he can have the kale and a different oil and spices so we will give this a try 😀

      Thanks Amy. It is a good alternative to other less healthy snacks although I know at first reading most people think ” Ugh kale crisps ?” But definitely worth a try.And yes, you can use any other oil. Sometimes I just use coconut oil which is my favourite oil at the moment. Let me know if your partner likes them. Hope he does xx

    This is great, I am finding writing about anything cooking wise that I seem to create quite fattening or unhealthy foods so this is great idea for me and Cora to snack on. 🙂

      These are super yummy and so healthy. And they just don’t taste like kale which can be a bit bland. Watch them while they are in the oven as they easily burn. But once you taste these you will love them, I’m sure. They are definitely so moreish. Let me know what you think x Susanna x
