Easy Broccoli and Stilton Soup In Thirty Minutes.

I have been making this Broccoli and Stilton Soup since I was pregnant with my first child thirty years ago. At the time I was trying to eat healthier and I came across this old family recipe. I must admit I’m a bit of a lazy cook and I don’t seem to have the patience to stand for hours in a kitchen trying to rustle up some marvellous dish. ┬áMy children would also tell you that I’m also not the best of cooks either, confirmed by the constant sound of the smoke alarm whenever I am in the kitchen. ( except when I’m making coffee which is my speciality !)

So back to the Broccoli and Stilton Soup. Well it’s a very simple recipe, not many ingredients and takes about thirty minutes to make. Perfect for a quick, homemade lunch which tastes so much nicer than shop bought soup and is much healthier.

The ingredients you will need are :

A broccoli. Fresh is good but you can just as easy make this with frozen broccoli.

One onion. You can omit the onion if you like, as its for flavour so instead you can add more spices of your choice.

Butter or anything else to fry the onion in. I sometimes use coconut oil.

Stilton Cheese 50g. Usually a Xmas cheese but its strong flavour is great in soups and it compliments broccoli well.

Various spices to flavour. I use coriander, turmeric, garlic, chilli flakes and black pepper. I never use salt to flavour but you can add it if you wish. I add ground black peppercorns in place of salt.

Stock cube. I use low salt vegetable ones but you can use any. One stock cube is enough but add another if you wish.

Double cream. This is optional and I only use it to create a fancy swirl on top of the soup when you are serving as it looks pretty and I like pretty things.

First job is to dice the onion ( watch those tears ) and fry gently in a saucepan with the butter till the onion becomes translucent. I add the spices at this stage too. Just add half a teaspoon each of garlic granules, turmeric and coriander. I also add a pinch of chilli flakes but go easy on these unless you like a very spice soup.

Next chop the broccoli up into small chunks and place in the same pan as the cooked onion. Yes, this is a one pan method. No need for special pans so not much washing up ! Yay !

Next cover the broccoli with boiling water and add a stock cube. I don’t melt the stock cube before it goes in the pan as I find it all melts within the cooking time anyway. Use enough water to cover the broccoli but if you find your finished soup is a bit thick then you can always add boiling water at the end to make a smoother soup.

Now just leave the broccoli to boil away on a medium heat till cooked which is about 20 minutes.

Now comes the fun bit ! Blending the broccoli into a nice smooth soup. You will need any kind of a blender for this. I use a hand blender which I find easier to use than the large blenders which entail more washing up and need more storage space in your kitchen cupboard.

After blending to a smooth soup now its time to add the Stilton cheese. Stilton is quite a strong cheese so its up to you how much you want to add depending on your taste. I add about 50 grams as I find this is right for me. There is a hint of the Stilton flavour without it been too overpowering.  Just crumble the cheese into the soup and pop back onto a low heat so the cheese can melt into the soup.

Once that is done check the consistency of the soup. If it’s too thick and you would prefer a runny soup just pop some more boiling water into the soup until you are happy with the texture.

And finally, to serve, I like to add a swirl of double cream on top before serving. You can also add a sprinkle of parmesan cheese on top of the soup if you wish and a hint of ground black peppercorns for a stronger flavour.

And that’s it ! Fresh, healthy, homemade soup in just 30 minutes. Yes, it’s a very basic recipe but I think that more of us would make fresh soup if we knew how quick and easy it was.

I also use this recipe ( minus the broccoli and cheese ) as a basis for other soups I make, usually with ingredients that are lurking in the bottom of the fridge that are due to be binned. It’s a great way to use up leftovers too.
